Paulo Airaudo, the creative force behind PORTALE’s culinary concept, is the chef and owner of the Paulo Airaudo Group, based in San Sebastián. The group’s restaurants currently hold a total of eight Michelin stars across a portfolio of eleven venues spanning Spain, Italy, Hong Kong, and Thailand. At PORTALE, Airaudo and his team oversee the development of the gastronomic offering and hospitality concept, shaping its identity and direction through a contemporary interpretation of tradition defined by technique, simplicity, and a modern culinary language.
